Salt and Pepper Mix
1 cup Kosher salt
1 tablespoon ground black pepper
Combine and mix thoroughly.
Use as every day seasoning and should always be available in your pantry.
Makes 1 cup
Note: I use almost exclusively salt and pepper mix to season, as I believe everything should taste for what it is. A fresh piece of fish should taste just like a fresh piece of fish and should not be covered with some heavy seasoning unless its blackened or calls for some other ethnic taste. Season with salt and pepper, sear it, and serve it over a light salad or salsa and roasted lemon.
